Instant coffee is just ground coffee in a jar, right? Actually there is more to this powdery coffee substance than what meets the eye. Instant coffee has been ground, brewed at higher than normal temperatures and then dried, this allows for a quick repurposing with water that we call “instant coffee.” This also means that it is a processed food and as we continue to learn about processed foods in our modern culture we are recognizing the extra toxic load it puts on our bodies systems. Fresh foods will always be the better choice from coffee, to veggies, to humanely grown animals.

Like mentioned above instant coffee is processed, therefore it undergoes high temperature brewing before being dried and converted into powder form. This high temperature heating increases the amount of acrylamide. Studies have found that instant coffee has twice as much acrylamide as fresh, this acid shows to cause damage to the nervous system and has markers for increased risk of endometrial and ovarian cancers. A Harvard study states, “Scientists have known for years that acrylamide is capable of causing nerve damage in humans, including muscle weakness and impaired muscle coordination.”
Indeed acrylamide is found in regular brewed coffee as it has to be heated at boiling temperatures (another reason to try cold brew coffee), however instant coffee has 2x the amount. How do we clear acrylamide from the system? Good question! Drink water, which is always a great idea when drinking coffee in general and for optimum health. Don’t forget we are almost 80% water!
